Southern Grilled Hamburger Steak With Onions and Mushrooms

It’s been all I could do to put out today’s dinner post as I can’t sit still for wanting to work outside it’s so beautiful. This is the kind of  weather I would wish for all the time. I want to grill today and it’s a great day for just that.

Today just perfect for sitting outside having a good cold Carona with Lime and just chatting with my hubby and watching the dogs play..

I’m going to make my famous southern Hamburger Steak and Gravy right on the grill which is so good, you want be able to sit still while you it eat. We haven’t grilled a lot this year like we did last year. Last year we grilled out at least once a week.  Hope you enjoy!!

Ingredients

Hamburger Steaks

Mushroom gravy

  • 2 tsp olive oil
  • 8 oz can mushrooms  (baby bella) sliced
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 Tablespoon of flour
  • 1/2 tsp salt
  • 1/2 teaspoon of pepper

Instructions

  1. Mix together Ground Beef, Worcestershire sauce, Cheddar cheese, salt, pepper, and McCormick Steak seasoning. Form into 6 patties.
  2. Place on the grill and grill till medium done (slightly pink inside).
  3. After they are done grab a large skillet and place on the grill. (be sure to remove your hamburger steak while doing this as to not over cook)
  4. Add 2 tsp olive oil  to the skillet. Add Onions and cook for 5-6 minutes until they are starting to brown,  add  mushrooms and cook an additional 2 or 3 minutes.
  5. In a small bowl mix chicken broth and flour together.
  6. Add chicken broth mixture, Worcestershire sauce, salt and pepper to the onions and mushrooms. Add hamburger steaks back to the pan. Cook 3 minutes till sauce is thick.

Baked Sheet Pan Nacho’s

nachossalad Hey you all, how’s it going today? I love this day because the temp is wonderful as I’m sitting outside doing my work and enjoying this weather. It want be long when the cold weather will come in and days of sitting outside at my patio table will be gone till next year. I’m enjoying it  while I can. I put out more of fall decorations yesterday evening as I love the fall of the year. Is everyone ready for fall which bring pumpkins and hoodies, bonfires and my favorite Halloween? I made some cute decorations for the front porch out of butternut squash where I found a tutorial and they turned out adorable. OK on to dinner. I’m in the mood for Mexican food tonight and decided to make a taco salad only this is a sheet pan dish that you bake. It’s easy to make and delicious.  Who doesn’t love a good taco salad, right? Be sure to pick up a huge big bag of tortilla chips as you want be able to stop eating it. You can add spoon some refried beans to tortilla chips  as well before you bake if you like. INGREDIENTS

  • 2 lbs ground beef ( can substitute for  turkey)
  • 2 packets taco seasoning
  • extra large bag of Tortilla chips
  • 1 cup sour cream
  • 2 cups chopped lettuce
  • 1 cup chopped tomato
  • 2 cups shredded cheddar cheese
  • 1/2 cup olives
  • 1/2 cup green onions
  • 1/2 cup jalapeno

INSTRUCTIONS

  1. Preheat oven to 375.Cook ground beef over medium heat in a large skillet until no longer pink.
  2. Drain meat and add taco seasoning cooking  for around 2 o 3 minutes on low heat.
  3. Meanwhile take out a large sheet pan and arrange a layer of Tortilla chips on the pan. Next add some ground beef and then sprinkle some of the cheese on top off the ground beef.
  4. Place in the oven and bake around 4 or 5 mints till cheese is melted.
  5. Take out of oven and let cool for a few minutes
  6. Sprinkle the lettuce, tomato, cheese and olives, green onions, jalapeno all over the hamburger and chips and then  top with spoonfuls of sour cream.  Serve warm and ENJOY!

Cheesy Sour Cream and Hamburger Casserole

Hello people.. Did you all have a good weekend? I did, hubby and I went to the October  fest here near St. Louis. We had a good time. Walked around looking at all the crafts and watching the acts sing and dance. My favorite part is looking at the crafts. I’m always looking for something interesting and useful that you don’t see anywhere.

It’s a gloomy day today not suppose to rain but a good day for something comforting and hearty. I just want to go get in my PJ’s  and lay around all day and wait for the new series Manifest to come on tonight. It’s pretty good if you’ve not watched it yet.

Well enough rattling on.. I’m fixing Cheesy Sour Cream and Hamburger Casserole today. It’s really good and goes really good with a good garden salad and some Cheesy garlic bread. Hope you will enjoy it.

INGREDIENTS

  1. Preheat your oven to 350°.
  2. In a large skillet over medium-high heat, cook the hamburger making sure that your breaking it up. Add the onion, bell pepper, garlic and salt and cook for 5 minutes until the hamburger is cooked through. Add the pasta sauce and mix well.
  3. In a small bowl, add the cream cheese and microwave for 1 minute.
  4. In a sprayed 9″x 13″ baking dish, add the cooked egg noodles, sour cream, cream cheese and Parmesan. Mix until well combined. Add the hamburger mixture to the pan and stir until everything is loosely combined.
  5. Top with the shredded cheddar and Italian seasoning. Bake at 350° for 30-35 minutes, until cheese on top is slightly browning.

Chicken Noodle Casserole

Good Day everyone.  I been waiting all morning for the sun to come out today cause hubby and I are going to the October fest in St. Louis today, but it  just not coming out yet but suppose to. Today really looks like a fall day out side the temp is only 59’F.

I’ve decided to make another casserole again to day  this one with some chicken. I admit though that I didn’t take the time to cook a chicken so had hubby go this morning and pick up a rotisserie as it’s really good in this dish.

This has a lot of veggies as well and very hearty. Your family will enjoy it, trust me. It’s an easy meal to cook and I like the heating up the leftovers the next day for lunch as it taste even better. Please enjoy.

INGREDIENTS

  • 2 cups uncooked egg noodles
  • 2 cups cooked, shredded chicken( I like using rotisserie) 
  • 1 (10 oz.) package frozen peas and carrots
  • 1 (10 oz.) package frozen corn
  • 1 cup milk
  • 1 (10 oz.) can cream of chicken soup
  • 1 (10 oz.) can cream of mushroom soup
  • salt and pepper, to taste
  • 1/2 Tablespoon dried minced onion
  • 2 Tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning (optional)

INSTRUCTIONS

  1. Preheat oven to 350° F. Spray a 9×13 inch baking dish with nonstick spray.
  2. Boil egg noodles according to package directions. Drain water.
  3. Meanwhile, in a large bowl combine all the other remaining ingredients. Add cooked noodles to mixture. Gently stir to combine everything. Pour into prepared baking dish. Cover with foil.
  4. Bake 30 minutes or until heated through. Remove from oven and let stand 5 minutes before serving. Enjoy!

Hamburger Cheese Casserole

Hey everyone so sorry I didn’t post yesterday morning . I had gone to the Dr. and after getting home just keep getting sicker by the moment. By the afternoon I could barely breath. Went to the emergency room, turns out I’m allergic to the medication I was prescribed. I have never had issues in my life with taking medication. Feel much better this morning though.

I really don’t know what to make to  day..Humm let me think. I laid out hamburger last night …

20 minutes later..ohh I know, I’ll make my famous Hamburger Casserole. I’ve not had that in a while. This recipe was a big winner when my children were little and lived at home. They were like mom you are such a good cook  this is so good and I’d say my babies mom added a special ingredient that’s why it’s so good. They’d say what mom and I’d tell them I sprinkled it with love. This became a regular when I made something  that was extra good to them.  They’d ask if I sprinkled it with love each time and I’d say yes mom did..lol.

This is an easy dish to throw together and put in the oven, You can add another 1/cup of each cheese  than the recipe calls for if you like a lot of cheese. How how perfect to me. I hope you will enjoy the recipe.

  1.  In a large skillet pour in oil, then put in the diced onions. Add in the ground beef breaking it up. Add salt and pepper to taste, along with the  garlic, paprika ,oregano, and Italian seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for around 10 minutes.
  2. Mean while cook the macaroni according to instructions on the box, After it cooks drain and add it to the cooked hamburger. Turn off heat of hamburger add the cheese mixing it up.
  3. Preheat oven to 350’F and place the cooked hamburger in a large baking dish and add the 1 cup of mixed cheeses to the top cook around 40 minutes at 350″F  degrees.  Be sure to check on it after cooking around 30 minutes as you don’t want to let the top of the cheeses get to brown but slightly as some ovens are hotter than others.
  4. Take out of oven cool a few minutes and Enjoy.

I pick up garlic bread with this. I like the cheesy garlic breads. I also serve with a side garden salad.

Cheesy Lasagna with Raspberry Cobbler Crumb Crispies For Dessert

Hello out there how is everyone? I’m freezing today it’s actually cold here in St. Louis today 67’F which is making me so sleepy. I been up since 5 this morning and had the whole house cleaned by 8. I been trying to get this out since then but my eyes are burning really bad. May have to go to Dr if it doesn’t stop.

I laid out hamburger last night and wasn’t sure what I would make with it. But now its hit me I’m going to make my famous Lasagna that everyone loves. I love Italian but after being spoiled with the real Italian food in Europe I just can’t find a good restaurant here that’s affordable to eat it other than Olive Garden and that still isn’t like eating it in Italy which is where I had my first real taste of good Italian food. I love this recipe and use a lot of cheese in it. Hope you will like it as much as we do.

Ingredients
  • 2 pounds ground beef
  • 1 large chopped onion (around a cup)
  • I jar of spaghetti sauce ( I use the great value brand from Wal-Mart and its as good as  the prego brand I have used for years)
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon minced garlic
  • ½ teaspoon pepper
  • 1 tablespoon salt
  • 12 lasagna noodles, (I use Oven ready, there is no boiling involved)
  • 4 cups shredded mozzarella cheese
  • 15 ounce container cottage cheese
  • ½ to ¾ cup Parmesan cheese
  • 1 Teaspoon of Olive oil
Instructions
  1. Preheat oven to 350′ F.
  2. Heat olive oil in large skillet at medium high heat. Add the ground beef, onion and garlic and cook until meat browns  cooking completely. Add tomato sauce, , oregano, basil, red pepper flakes, pepper and salt. Cook on medium heat until mixture comes to a boil. Reduce heat and simmer for a few minutes. Turn off  the heat.
  3. Spray a 9×13  baking dish with cooking spray and place down three noodles on the bottom. Top the noodles with very small spoonfuls of cottage cheese, mashing it down lightly to spread it all over, then add the mozzarella cheese. Top with  ⅓ of the meat sauce. Sprinkle with Parmesan cheese. Repeat layers at least two more times. Top the very last layer with extra cheese 🧀. You can never have too much to me.
  4. Bake at 375 degrees for 45 to 50 minutes or till cheese is slightly browning on top.
  5. Enjoy!! Let my know if you make this dish how much you like it.

I haven’t made dessert in a long time since we try to stay away from sweets due to my husband being diabetic. Tonight darn it I’m making this after finding the recipe on  www.chef-in-training.com/ web site while trying to find something that I could make with my can of raspberry. I came across this site and it looked so good. Will let you know how good when I update.

  1. Preheat oven to 400 degrees F
  2. In a large bowl put in butter to sugars, cinnamon, salt and flour to form crumbs. (mixing it up)
  3. On an ungreased cookie sheet, separate crescent roll dough into 8 triangles.
  4. Spread 2-3 tablespoons of Raspberry pie filling over the tops of crescent rolls.
  5. Sprinkle crumb topping on top.
  6. Bake at 400 degrees F for 8-12 minutes.
  7. After they were cooked and cooled, I cut them into smaller triangles but you can leave them big too!
  8. To make glaze: Blend together all the glaze ingredients and drizzle over Raspberry Cobbler Crumb Crispies.

One Sheet Pan Apple Gouda Stuffed Chicken

Hello everyone, I’ve had a time putting out tonight’s recipe. Between trying to watch the new Manifest movie series that came on last night that I missed, to making the graphics for this post and also trying to get the links in while fighting with my pet squirrel Herman who has decided I should be all his..🤣🤣🤣😂😂.

Tonight we are having this tasty dinner that  I love called “One Sheet Pan Apple Gouda Stuffed Chicken”. This recipe is a one sheet pan meal which I love and means no messy clean up. I usually put aluminum foil on the pan and just take it off and wipe it down with a wet cloth. This recipe is only for two put you can double or triple depending on the size of your family

INGREDIENTS:

For Chicken:

  • 2 large boneless, skinless chicken breasts (double or triple for 4-6 servings)
  • 2 ounces gouda cheese, thinly sliced
  • 1 large apple, thinly sliced
  • 1 teaspoon olive oil for chicken
  • 1 teaspoon fresh thyme, more if desired for garnish
  • 1/2 teaspoon salt
  • 1/2 fresh ground pepper

For Sweet Potatoes:

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon sea salt
  • 1 tablespoon melted butter
  • 1 teaspoon brown sugar

DIRECTIONS:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Spray a large sheet pan with nonstick cooking spray. Split each chicken breast cutting across but not through and open like a book. This is also known as butterflying. On one side of the chicken, lay out 7-8 thin apple slices followed by 4-5 slices of cheese. Sprinkle with 1/2 teaspoon fresh thyme. Fold over and drizzle with 1/2 teaspoon olive oil. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  3. Place the chicken breast on sheet pan and top with another sprig of fresh thyme if desired.
  4. In a bowl, mix diced sweet potatoes with olive oil, smoked paprika, brown sugar, melted butter. 1 teaspoon thyme leaves and sea salt until evenly coated. Arrange sweet potatoes around chicken breasts.
  5. Bake for 20 minutes and then stir sweet potatoes.
  6. Continue to bake another 15 or until sweet potatoes are tender, should be fork tender.
