Autumn Harvest Chicken Soup

I really tried to get Tonight’s Dinner recipes out to you all yesterday, but my internet had been down and I had to wait on internet provider to come and he was late evening coming even though time window was 12 to 2. I tried doing it from my phone but every-time I’d try, I could feel a Migraine coming on which would hurt so bad. It was just one of those days.

Today it’s so dreary, cloudy and ready to rain here in Missouri. I have some chicken laying out and decided I wanted to make something that felt like a fall meal as it does feel like a fall day.  I’m going to make Autumn Harvest chicken Soup. My husband is a soup lover so he will enjoy this when he gets home. I love all the veggies that go in this soup it really gives it a great flavor.

Ingredients
  • 2 acorn squash
  • ⅓ cup friendly fat to cook in (butter, lard, or coconut oil)
  • 2 medium onions, chopped
  • 4 medium carrots, chopped
  • 4 stalks of celery, chopped
  • 4 medium Russet potatoes, chopped
  • 1 head of garlic, minced (about 8 cloves)
  • ¼ cup white rice flour (tapioca flour if you are grain free)
  • 2 quarts chicken bone broth
  • 2 cups cooked shredded or chunked chicken
  • ¼ to ½ pound fresh organic baby spinach (can be substituted with Brussels sprouts or cabbage)
  • ⅛ to ¼ tsp cayenne pepper (optional)
  • Sea salt/pepper to taste

Directions

  1. Put the acorn squashes in large baking pan and then place in the oven WHOLE at 425 degrees for 1 hour. When you take them out, cut them in half and let them cool to touch while you start making the soup.
  2. Sautee the onion, carrot, celery, and potatoes in the butter with a few big pinches of sea salt to bring out their juices and sweeten. Cook on medium/high for about 10 minutes.
  3. While the veggies are cooking puree the roasted squash in your processor or blender with a little of the bone broth to be sure it gets fully pureed.
  4. Add the garlic to the pot and cook for a minute.
  5. Add the flour to the pot and cook for a minute.
  6. Add the squash puree, bone broth, chicken, and spices to the pot and bring to a simmer for about 5 minutes.
  7. Add the spinach to wilt in and then season sea salt/pepper to taste

Validation From Total Strangers

Those are big words “validation from total strangers.”Validation From Total Strangers It’s really sad if you think about it that we rely on what others say about us in order to feel good about our selves right down to total strangers.  It makes me sad that I to once was this way, that I needed the approval of a total stranger in order to fill good about myself.

I blame society for this mainly because every where you look there has got to be sexiness involved. It’s the biggest seller of just about everything we buy to. Make it look sexy and beautiful and they will buy it.  Make your self  look sexy and beautiful and you will have friends and be very popular.

It’s in film, music, magazines, advertisements and in most  everything we see and do everyday.  It’s no wonder kids are posting the kind of pics they post of themselves on Facebook or Instagram. They post these pics in hopes to get approval from their friends from school or total strangers they don’t even know, so they will feel they look beautiful or sexy.

It’s obvious that the marketing for all these things is getting worse each day as far as using sexiness to sell a product and will continue to get even more worse.

If we allow are our kids to participate in such activities on social media where they are posting pictures for approval from friends and total strangers to make them feel good about themselves without some kind of discipline about it, then we are to blame for their depression or mental illness that most likely will appear. This could come when they feel they aren’t getting the attention they should be getting from social media about how beautiful they are in order to feel popular.

We as parents got to snap out of it and start being parents and not let our children have social media in their life-like we do. However though we sit there on our phones surfing Facebook and Instagram, commenting on posts from friends who we have never met while our kids sit beside us doing the same. We are robbing them of social time with family as well then.

Children really  need this time to learn about family structure in order to understand the meaning of how a family is supposed to work. When they don’t get this attention  they will go on social media to get attention and noticed…..SO SAD BUT TRUE..

It’s then that they need validation from friends or total strangers on how they look or feel. This can lead to some major depression and even suicide in some teens when feeling rejected from what others think or feel about them. As parents we have to put down our own phones and start having family time.

Teach your children that what others say isn’t important from the very beginning of their lives so they don’t grow up thinking it’s more important what everyone else is thinking of them. They need to relize they are unique and all beautiful creatures. They need to learn to love themselves and thin k they are beautiful so they don’t rely on what others  say to make them feel loved.

I feel that to many kids are getting on social media at such an early age. It shouldn’t be allowed in no family home till they are in their late teens and responsible.

You might want to think about this before you let you children download social media apps.

 

Sheet Pan Steak and Veggies

Tonight's Dinner

We all love sheet pan dinners when there is nothing planned for the day and if your family is like mine the first thing they ask me is “whats for dinner” each evening. Here’s a great sheet pan dinner I love making. It calls for a sheet pan only which means an easy cleanup. I like to put foil on the pan as well which makes it even easier. Enjoy!!

INGREDIENTS:

  • 2 pounds baby red potatoes
  • 16 ounces broccoli florets*
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds (1-inch-thick) top sirloin steak, patted dry

DIRECTIONS:

  1. Preheat oven to broil. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a large pot of boiling salted water, cook potatoes until parboiled for 12-15 minutes; drain well.
  3. Place potatoes and broccoli  in a single layer onto the prepared baking sheet. Add olive oil, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine. (can boil broccoli in water for about 2 mints if you want it softer)
  4. Season steaks with salt and pepper, to taste, and add to the baking sheet in a single layer.
  5. Place into oven and broil until the steak is browned and charred at the edges, about 4-5 minutes per side for medium-rare, or until desired doneness.
  6. Serve immediately with garlic butter, if desired.

Garlic Butter Steak and Potatoes Skillet

INGREDIENTS

  • 1 1/2 lb (650g) flank steak, sliced against the grain
  • 1 1/2 lb (650g) baby yellow potatoes, quartered
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 5 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped
  • Salt and fresh cracked pepper
  • Crushed red chili pepper flakes, optional

The marinade

  • 1/3 cup soy sauce (or coconut amino if you’re strictly paleo)
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce 
  • Fresh cracked pepper

Directions:

1. In a large bowl, combine the steak strips with soy sauce, olive oil, pepper, and hot sauce. Set aside to marinate while you cook potatoes.

2. In a large skillet over medium-high heat, mix 1 tablespoon olive oil and 1 tablespoon butter. When butter is melted, add potatoes. Cook for about 4 minutes, stir and cook an additional 4-5 minutes until potatoes are golden and fork tender. Transfer to a plate and set aside.

3. Keep the same skillet over medium heat and add remaining 2 tablespoons butter, garlic, red chili pepper flakes, and fresh herbs. Lay the steak strips in one layer in the skillet, keeping the drained marinade for later. Cook on each side for 1 minute each, until nicely browned – adjust timing depending on how you like your steak.

4. Right before the steak is done, you can stir in the reserved marinade if you like, and cook for one minute. Add the potatoes back to the pan and heat through. Adjust seasoning with salt and pepper if necessary.

5. Remove from heat and serve immediately, garnished with more crushed chili pepper, fresh herbs, and a sprinkle of parmesan cheese over the potatoes if you like. Enjoy!

Note: You can precook the potatoes in boiling salted water for 8 minutes before browning them. This will accelerate cooking time in the skillet and ensure a nice golden crust on the potatoes.

My Friend Sonnie

It has been so hot the last few days. We were under a heat index till Wednesday here in Missouri.  Yesterday it rained all day and today it cloudy and feels like a fall day.

I can’t believe how fast this summer has gone by. I really and truly didn’t do anything this summer but once and that was going on a friends boat for dinner. Other than that I spent the whole summer in the house.

I’m cooking breakfast for my friend Sonnie. He’s an older black man who lives up in St. Louis but comes here to this neighborhood to mow grass as this is where he was raised. Our landlord let’s him store his mowing equipment in our garage. He has his on little section that still leaves us plenty of room to park 2 cars if we want. I feel in love with him immediately because I think he senses how out-of-place I felt at first. He’s been so nice and brings my neighbors over  to meet me so I feel safe and not out of place. He tells me where not to go that isn’t safe and where to go that is safe. I really like that about him. He’s a good God-fearing man, but likes to drink him a good cold bear after  cutting grass. He reminds me of an uncle as he is always in long  sleeve shirts and overalls.

Each day is getting easier and I don’t feel so out-of-place like I did. I still miss Georgia though and always will. I miss the girls spending time with me as that was the high light of my life. It really hurts to think of the past but I don’t allow my self as I can’t go back there again and allow myself another break down. It seems like it was a dream I quess of a great time where I had children in my life again.

Georgia has seemed the closest place to home I have ever felt since I left Kentucky many years ago when I married my husband. I miss Kentucky at times but it’s never really seemed like home to me. I always felt I didn’t belong there and now when I visit it’s like a horrible dream of who all is dead and gone. I don’t know very many people there even anymore.

When I left there I just sorta never looked back….

Well breakfast is finished and Sonnie is finished mowing up the street and out front . Gonna go sit outside with him and have breakfast.. love hearing him tell stories about the ghetto when he was growing up..till next time.. take care…
