Yummy Chicken And Cornbread Casserole

Hey everyone its a good day for yummy chicken and cornbread casserole. I just don’t want this day to end as it’s so beautiful here and I know that it will end soon. I been setting outside since around 8;30 this morning. The squirrels have been so fun to watch today. They are finding food and practically walking right by me to hide it. It’s so cute and funny to watch them pat down a hiding place with their feet.

Last night I prepared a chicken cornbread casserole dish that we have from time to time especially in the winter. I found this recipe on another site some time ago and tweaked it to fit our taste. It’s so hearty with all the vegetables and the sweet cornbread topping is to die for. Hop you enjoy!!

Ingredients

  • 4 large boneless skinless chicken breasts (cubed 1 inch)
  • 1/2 cup diced onions
  • 1/2 cup butter
  • 1 large bag frozen mixed vegetables
  • 1/2 cup all purpose flour
  • 2/3 cup milk
  • 1 1/2 cup chicken broth
  • Salt and pepper to taste
  • 2 Small boxes Jiffy  Cornbread  Mix
  • 5 large potatoes (cute into small cubes around 1 inch each)

Directions

  1. In a large pot cook cubed chicken in 2 Tablespoons of oil on medium heat. Cook about 10 minutes. Take chicken out and set aside.
  2. Now melt butter in the large pot keeping it on medium high heat. Add onions cook 2 minutes. Add in bag of frozen vegetables, around 5 minutes
  3. Stir in flour and cook for 2 minutes, stirring continuously.
  4. In a in bowl whisk chicken broth, milk and flour till no there’s lumps. Allow mixture cook for a few minutes to thicken. Stir in cooked chicken and cook for another minute or so until the entire mixture is hot. Remove from heat.
  5. Pour the mixture in to a 9 x 13 baking pan.
  6. Prepared cornbread mix, smoothing the mixture out to cover the top of the baking pan
  7. Bake at 375. for 25 to 30 minutes. Make sure to bake long enough so that the bottom of the cornbread bakes through. Once the bread is done, remove from oven let sit for few minutes.

Mexican Cheeseburgers

Good after noon you all. I’m late getting this out today. Over slept this morning and had to jump up and take care of my morning things so I could hope on here and get this out.

How is everyone. I’m trying to make it through the day. It’s getting ready to rain and I just want to crawl on the couch and sleep. I really don’t want to do anything but be lazy.

I’ve wanted to make some Mexican food today and decided on Mexican Cheeseburgers with homemade french fries. This a Hubby’s favorite meal. He loves homemade french fries and so do I. They go great with this Mexican  Cheeseburgers and I promise your going to love them. My Kids used to love this meal as well when they lived at home. Hope you enjoy it!

INGREDIENTS

  • 2 Large Yellow Onion
  • 1 Tablespoon Butter
  • 2 pound Ground Beef
  • 4 Tablespoons Worcestershire Sauce
  • 1 Package Of Taco Seasoning (mild or hot)
  • 6 Slices Monterrey Jack Or Swiss Cheese
  • Hamburger Buns
  • Banana Peppers
  • 2 Jalapenos Peppers
  1. Cut  onions and Jalapenos lengthwise and saute in butter till tender.
  2. In a large bowl, add the ground beef, Worcestershire sauce, and taco seasoning. Mix all the ingredients well and form into 6 burgers and cook in a large skillet to desired wellness. ( I like mine slightly pink inside)
  3. When hamburgers are done place a slice of cheese on them and allow it to melt. Once the cheese has melted, place some of the sauteed onions on top of the burger. 
  4. Place on hamburger buns and add banana peppers and any extra’s you like on your hamburger. Enjoy!!

Southern Grilled Hamburger Steak With Onions and Mushrooms

It’s been all I could do to put out today’s dinner post as I can’t sit still for wanting to work outside it’s so beautiful. This is the kind of  weather I would wish for all the time. I want to grill today and it’s a great day for just that.

Today just perfect for sitting outside having a good cold Carona with Lime and just chatting with my hubby and watching the dogs play..

I’m going to make my famous southern Hamburger Steak and Gravy right on the grill which is so good, you want be able to sit still while you it eat. We haven’t grilled a lot this year like we did last year. Last year we grilled out at least once a week.  Hope you enjoy!!

Ingredients

Hamburger Steaks

Mushroom gravy

  • 2 tsp olive oil
  • 8 oz can mushrooms  (baby bella) sliced
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 Tablespoon of flour
  • 1/2 tsp salt
  • 1/2 teaspoon of pepper

Instructions

  1. Mix together Ground Beef, Worcestershire sauce, Cheddar cheese, salt, pepper, and McCormick Steak seasoning. Form into 6 patties.
  2. Place on the grill and grill till medium done (slightly pink inside).
  3. After they are done grab a large skillet and place on the grill. (be sure to remove your hamburger steak while doing this as to not over cook)
  4. Add 2 tsp olive oil  to the skillet. Add Onions and cook for 5-6 minutes until they are starting to brown,  add  mushrooms and cook an additional 2 or 3 minutes.
  5. In a small bowl mix chicken broth and flour together.
  6. Add chicken broth mixture, Worcestershire sauce, salt and pepper to the onions and mushrooms. Add hamburger steaks back to the pan. Cook 3 minutes till sauce is thick.

Think Hypo-mania Is Coming Back

Hey everyone sorry I haven’t been posting and taking the time to read your posts but I have been so busy it’s not funny. In fact so busy I feel like hypo-mania has come back. I’m totally stressed with all the work I’ve put on myself, in fear that if I don’t stay busy I’ll get real depressed again and have a psychotic breakdown.

In fact over the past 3 weeks I have did two web sites for other people to make money and started 2 more blogs of my own to make money as well as updating my ones I already had everyday.  Things were going pretty good at till these past few weeks.

I feel like I can’t breath and I’m having trouble focusing on even getting one post out each day.  It takes me at least 3 hours to make a post that normally would take 30 minutes because I get so distracted by thinking of everything I need to do that day. I find when I’m thinking of those things trying to do them all it doesn’t work, and before you know it I’ve got 10 things started at one time and having a melt down. I want to scream when my computer freezes up or I have computer work to do as well as house work and just don’t know where to start.

I’ve also been worrying a lot these past few weeks feeling like something terrible is going  to happen. There is nothing worse than feeling fear all the time that something is going to happen bad. I feel like things have been going to good because in the past every time good happens for awhile, bad follows right after. I hate this feeling. In fact next week I start back in therapy which is gonna throw a loop in my other plans for starting back in wellness again. Maybe I’ll figure a way to juggle it all. If not will start it back again in the spring of the year.

I want to go to either the picture above or one of these places in this video below and just stay for eternity and never think or worry about anything anymore. Bring all my family, friends and my fur-babies.

Starting tomorrow I am also going to go back to a schedule. I did really well on this when I lived In Georgia, but didn’t start it back up when I got here ques cause I was so busy for a few weeks getting it together here Missouri. I really like schedules and when I make mine I allow myself so much time for each thing I need to do and then move on to the next. It just seems so easy if I have in from of me a bullet journal with a list of things I need to get down.

I check them off when I’m finished and if I don’t get it done I move on to the next one on the list and if I finish that one early I go back to what I was doing, and this worked most of the time. However though in the past I was able to complete everything in the time I allowed myself for that task. With me being a jumbled mess not sure if it will work when I start back in the morning, but will see.

I feel like I need a vacation since I’m feeling this way as I haven’t had one in forever and been looking at some photos on pexels.com. I love this site and get most all my photos I use to work with from there as it’s free to use in commercial sites. Here are some pictures I use for my Quotes I make each day.

This reminds me of a waterfall that my husband and I would visit when we lived in Oregon. So beautiful and peaceful as could be. The walks there good memories we made.

If I could go here  I’d stay forever. Ohh yes this place would be like a place to live in serenity and just forget the world. Sit out on the porch and work all day on my computer with a cold margarita.

Well its’ my bedtime as I’m  tired. I cooked a wonderful dinner tonight and I’m still full from eating it. That’s something else I’m starting Tomorrow as well, eating less, back to small portions. Have a good night you all.

When I was in my late teens and 20’s I was in love with Audrey. I would postpone something just to watch a movie of hers that came on. A few weeks ago I ordered a book about her by Barry Paris. It was wonderful biography on Audrey Hepburn and if you loved her movies you will love this book. You can tell the author was very fond of Audrey.
